Nitrate/Nitrite free uncured meat (yes! even free from those naturally occurring in celery/onion powder & salt) can be very difficult to find.
We limit nitrates/nitrites as much as possible (like once a week) if we cannot eliminate them all together. I am sharing are the ones we enjoy but keep in mind NO company currently has it seamless throughout their entire product line so you have to pay close attention to each product's ingredient label.
Dr. Maria Temple shares great points in the "celery deception." She shares when the nitrate comes from sodium or potassium nitrate it is FDA regulated however there are no limits for nitrate from celery powder. When curing meat with celery rather than sodium nitrate you are required by law to label that bacon as "uncured" as well as "no nitrates or nitrites added."
The WHO and AICR have classified processed meats as carcinogenic based on observational studies. Every 50 grams of processed meat per day (daily hotdog or bacon) ups the risk of stomach/colorectal cancer by 18%.
